Lemons offer immense versatility in the kitchen. A splash of lemon j juice brightens salads, meats, and drinks. I always have them on hand and use lemons in much of my cooking.

This lemon dressing was inspired by a potato salad that one of local restaurants uses in many of their salads. Chicken Maison is casual, “Modern Mediterranean” restaurant and we love their food. I think their dressing is more complex, but this is my interpretation of it. I also love the simplicity and the versatility for use.

Try this dressing as a marinade for chicken, brush it on salmon before grilling, try our Lemon Caper Potato Salad for a quick, mayo-less BBQ side. And what’s better than a simple, homemade dressing without all the preservatives and unidentifiable ingredients? That’s what I’m saying…try it. It’s just good.

For an added tip, I highly recommend using the best olive oil you can buy for salad dressings. The flavor of a good olive oil makes the dressing that much more flavorful and defined. Same if you are just using olive oil and vinegar to dress vegetables or greens, use the best oil you have. I typically keep a cooking oil and one for dressings or to use drizzled onto bread etc.

Ingredients
  

  • 1/4 cup lemon juice
  • 1/4 cup olive oil extra virgin
  • 1/4 teaspoon kosher salt
  • 2 cloves garlic minced
  • 1 teaspoon sugar or you can use 31/2 tsp to 1 tsp of honey or agave syrup.
  • 1/8 teaspoon pepper to taste
  • 1 teaspoon mustard Dijon

Instructions
 

  • Place all ingredients in a jar with a tight fitting lid.
  • Combine all ingredients in a jar and shake until well blended.
