Nancy’s Tuna Macaroni Salad is an ode to my Mother in Law. It’s a simple yet comforting salad that is a true pantry dish. Pasta, tuna, mayonnaise, celery, onions and green bell pepper or parsley. Sometimes she added carrots or whatever was in the fridge.
Yesterday, I was thinking of my Mother in law, Nancy. I was thinking about the Summer’s in New England… we always had a BBQ when we where there visiting and Nancy always made salads. She was a salad master. They were often simple, mayo laden and so uniquely hers.
How to make and customize Nancy’s Tuna Macaroni Salad
There is no recipe here, just a combination of ingredients that brings so many memories and a smile.
- 3 small packets or small cans of tuna in water, drained.
- 1 lb of macaroni elbows, or shells
- Mayonnaise
- About 1/2 cup chopped white onion
- About 1 cup of chopped celery
- About 1/2 cup of chopped green bell pepper
- Fresh parsley to taste
Cook pasta to package directions. Allow to cool. Once cool, combine and toss all ingredients and add enough mayo to coat all the ingredients. Add plenty of salt and pepper. Chill before serving.
