Steak Seasoning Rub

This is the absolute best Steak Seasoning Rub. It is perfect for grilled steaks, Prime rib, and roasts. My steak seasoning is a balanced salt-and-pepper blend with herbal notes from thyme and coriander. I love this seasoning blend for both steak and prime rib. I sometimes add one more ingredient to this rub to enhance the flavor of the roasted meat: dried rosemary leaves. It is the perfect addition for a tender roast with a crispy crust.

This Steak Seasoning Rub is perfect for all cuts of beef: rib eyes, New York strips, filet mignon, chateaubriand, tri-tip, porterhouse, t-bones, and of course, sirloin. Pot roast? Check! This is a great all-purpose beef seasoning.

This is an easy blend to make; however, there are two key points: use fresh-dried herbs and ground spices for maximum flavor. Also, freshly grind the pepper for the ultimate taste. If you don’t have a spice grinder or mortar and pestle, buy a new jar of ground pepper.

Ingredients

All of these ingredients are dried spices. I buy mine at Penzey’s, but any fresh, dried spices from any retailer will work for this recipe. What do I mean by “fresh”? Don’t use something that has been sitting in your pantry for 6 months. Spices lose their optimal flavor within a few weeks, so for this recipe, use the freshest spices you have.

  • Sea salt: I prefer to use a coarse-grain sea salt for this recipe.
  • Minced onion: I use it in this recipe for texture and flavor. Minced onion is sometimes labeled as onion flakes.
  • Peppercorns: freshly ground please for that fresh peppery taste!
  • Granulated garlic: for that extra layer of flavor.
  • Paprika: Use sweet paprika instead of smoked.
  • Dried thyme leaves: Thyme gives this blend an herbally, citrusy flavor.
  • Dried, ground coriander: It’s a small amount, but it gives this blend a significant little boost of herbal flavor.

Variations and substitutions

This steak seasoning is truly universal and easy to customize to suit your taste.

If you like your steaking seasoning to have a little kick, feel free to add a pinch of cayenne pepper, crushed red pepper flakes or chili powder.

I sometimes add dried rosemary leaves when I make a prime rib roast. It’s the perfect addition for both a prime rib roast, brisket, or even a pork roast. This is delicious with lamb chops, also.

You can use coarse kosher salt if you can’t find sea salt. Add another 1/4 tablespoon of kosher salt to balance it out, as kosher salt is less salty in taste than sea salt. For other types of salt, here are some tips for adjusting.

If you want to use this as a rub for ribs, add a large pinch of white or brown sugar, or use my Ancho chile rub, which is the BEST for BBQ!

How to store this steak seasoning

This seasoning keeps well in the pantry for about a month in a airtight jar or container. I make one batch at a time when I’m using it for steaks. For a 5-6-pound prime rib roast or a similar one, one batch of this steak seasoning rub is just right.

Equipment

  • 1 small bowl
  • 1 spice jar or small jar airtight with lid

Ingredients
  

  • 2 tablespoons sea salt coarse grind
  • 1 tablespoon minced onion dried
  • 1 tablespoon black pepper, fresh ground coarse ground
  • 2 teaspoons thyme leaves dried
  • 1 teaspoon paprika, sweet ground, (not smoked)
  • 1/2 teaspoon garlic granulated
  • 1/2 teaspoon coriander ground

Instructions
 

Steak seasoning rub

  • In a small bowl, mix all ingredients until thoroughly combined.

How to store

  • Place any leftover steak seasoning in a small jar with a tight-fitting lid and store in a dry place for up to a month or so.
