As the Summer season approaches I like to have back pocket dessert recipes for those hot days. Enter this Limoncello Strawberries recipe with the sweetness of Summer strawberries that marinate in bright sunny Italian liqueur Limoncello. These boozy strawberries are perfect for a trifle made with store-bought or homemade pound cake or angel food cake, with plenty of whipped cream and some fresh mint to compliment all the flavors

I love to entertain outdoors in the Summer and easy desserts are my jam. This is the simplest of simple and oh-so tasty! I am always on the hunt for no-bake recipes because let’s face it, the only heat I need is the heat of the grill outside and that’s it. Everything I can whip up that is oven and stove-top free, the better. And Summer is berry season, my favorite time of year! What is Limoncello?
Limoncello is an Italian liqueur made from the zest of lemons. It hails primarily from the coastal regions of Southern Italy, like Naples, the Amalfi coast, and Sicily. Traditionally it is served chilled as an after-dinner digestif. The bright yellow liqueur, is sweet, with some tartness but smooth. It can be found in specialty stores like Bevmo that stock a wide selection of liquors from around the world. If you have a Trader Joe’s nearby, they stock a private label that is good as well.
How to make Limoncello Strawberries
This Limoncello Strawberries recipe calls for sugar, vanilla, fresh ripe strawberries, and wonderful Limoncello. The strawberries are left in the fridge to soak up the sweet and bright vibes of the Limoncello and sugar, and they are nothing short of yummy when they are ready.
For this recipe, which yields 4 servings, you will need the following ingredients:
- 4 cups of strawberries, cored and sliced
- 4 tablespoons of Limoncello
- 4 teaspoons of granulated sugar
- 1/2 teaspoon of vanilla extract
Place the sliced strawberries in a dish large enough to spread in a single layer. Add the Limoncello, granulated sugar, and vanilla extract and toss well. Cover the dish tightly and refrigerate for about 4 hours. After 4 hours, the Limoncello strawberries are ready to serve. Toss before serving so the Limoncello liquid covers the strawberries.
Easy Limoncello Strawberry dessert
You need only a handful of ready-made ingredients to make this dessert. If you don’t have time for fresh-made, buy vanilla poundcake and ready-made whipped cream.
Ingredients you need for this delicious dessert:
- 4 slices, 1 1/2 inch thick of vanilla pound cake, store-bought or homemade
- 4 cups of whipped cream
- 4 fresh mint leaves
- Lemon zest for garnish
- 4 cups of Limoncello strawberries
Slice the pound cake into 1 1/2 inch slices and then slice into large cubes. Set aside. I recommend using parfait or trifle dishes for this. If you don’t have them, use a wide shallow bowl.
Layer a few pieces of the pound cake at the bottom of the dish. Add 1/2 cup of strawberries with the Limoncello liquid, layer some whipped cream, and then a second layer of pound cake. Add another 1/2 cup of strawberries with Limoncello liquid and more whipped cream. Garnish with lemon zest and a mint leaf. Now this delicious Limoncello strawberry dessert is ready to serve.
Variations
These Limoncello Strawberries are also delicious with whipped cream or on their own. If pound cake is not your jam, angel food cake is a beautiful alternative, as are homemade waffles with vanilla ice cream.
