Rich and Spicy Avocado Dressing

This is a perfect Rich and Spicy Avocado Dressing for all your Southwestern cravings. Perfect for a Cobb Salad, wraps filled with veggies, or a Southwestern Style salad. It’s flavorful, satiating, fresh and just enough of a kick with the Chipotle. It’s a super low carb, Keto friendly dressing.

This is my go to dressing when I’m in the mood for a ranch type dressing… like something to go with a Grilled Chicken Salad, or a Cobb Salad. In my case, for today, I made Cobb-like salad with some leftover Hangar steak, romaine, avocado, red onions , hard boiled eggs, extra sharp cheddar, tomato and some parsley leaves. I also made the dressing with Parsley today instead of Cilantro. I love it with both, but today I felt parsley worked better with the steak.

Different types of Chipotle Chiles

If you are not familiar with Chipotle chiles, they are smoked jalapeño chiles. They are available in dry pods, in adobo (canned) and ground. The dry pods are available in Mexican or Latin markets typically in bags or in the produce department loose and sold by the pound. Then there are Chipotle chiles en Adobo. These are jalapeños that have been smoked, dried and then rehydrated in Adobo sauce. What is Adobo? Adobo is made of dried chilies, vinegar, spices and is a universal sauce that is used in many ways in Mexican and Tex-Mex cuisine. They impart a beautifully intense smoky flavor and can be pretty hot. I’ve made this Rich and Spicy Avocado Dressing with both Chipotle in Adobo and ground Chipotle. The results? If you want distinctively smoky and spicy hot dressing use Chipotle en Adobo, if you want a mild flavor, use the ground.

Making the Rich and Spicy Avocado Dressing

You will need a blender or food processor to make this easily and it’s a simple as literally 1,2,3!

If you decide to use Chipotle en Adobo, you will have left over chiles. I freeze them in silicon ice trays and they have them use at a later date. You can see the process here. Be warned though, that they do get spicier as they sit in the freezer!

Equipment

  • food processor or blender

Ingredients
  

  • 2 medium avocados ripe, skin and pits removed
  • 1 cup cilantro or parsley fresh
  • 2 tbsp red onion finely chopped
  • 4 tbsp mayonnaise
  • 4 tbsp lime juice fresh, about 2 limes
  • 1 tbsp red wine vinegar
  • 3-4 tbsp water
  • 1/4 tsp chipotle, ground or 1 tsp of Chipotle en Adobo, finely minced. See note about this.
  • 2 tsp salt kosher
  • 1/4 tsp cumin ground

Instructions
 

  • Add all ingredients into food processor or blender.
  • Process for 1-2 minutes.
  • Adjust salt if necessary.

Notes

If you want distinctively smoky and spicy hot dressing use Chipotle en Adobo, if you want a mild flavor, use the ground.
